Sensory notes:
- Colour: pale red ruby colour
- Aroma: distinctive aroma, fruity, delicate and slightly spicy
- Taste: spicy, dry, slightly tannic with balanced acidity and almond aftertaste
Maceration takes place with its skins for about 10-15 days; the grape usually has three grape seeds that give a high tannic content and an astringent taste. It goes through a controlled temperature fermentation at 22-23°C for 20-30 days to confirm its rose aroma, and, after clarification, it is ready to be transferred into barrels for 6-7 months for a complete maturation and enhancement of tannins. It requires the presence of limestone soil (tuff ground).
